I'm pleased that you've finally had success with a chicken but wonder if you've always taken the bird straight from the refrigerator and put it straight into the oven? If you let your bird rest at room temperature for at least an hour, having taken off any trussing and stretched the legs and wings, you should be able to roast it perfectly every time. I do hope you'll try this.
